APRICOTS

Dried apricots are a type of traditional dried fruit. Once the apricots are harvested, the pit is removed and they are exposed to the drying process, mainly in the sun; but on some special occasions also under oven. Sometimes, prior to this drying process, these apricots are treated and exposed with sulfur anhydrides. When treated with sulfur dioxide (E220), the color is vivid orange. Organic fruit not treated with sulfur vapor is darker in color and has a coarser texture. Generally, the lighter the color, the higher the SO2 content.

The dried apricots are rich in fiber, iron and potassium. One cup of dried apricots provides 94% of your body’s daily need for Vitamin A and 19% of its iron. Dried apricots also contain potassium and antioxidants and have been known to lower cholesterol and improve digestion. Dried apricots are fat-free, low in calories & high in flavor!
